Bell Pepper Scoops

- 1/4 cup hummus
- 5 sweet mini peppers
- 1 tbsp minced red onion
- 1-2 tbsp chopped grape tomatoes
- 1 tbsp crumbled feta cheese
- Slice the top off of each pepper and discard. Slice each pepper lengthwise.
- Top with hummus and minced red onion, grape tomatoes, and feta.
- Dig in!
