- 1 zucchini, sliced into coins
- 1 squash sliced into coins
- 1 bell pepper, cut into strips
- 1 small eggplant, sliced lengthwise
- 1⁄2 bunch asparagus, washed and trimmed
- 2 TBS olive oil or vinaigrette of choice
- Non-stick cooking spray
- Salt to taste
- Toss the veggies in the olive oil or vinaigrette and salt.
- Coat your grill with nonstick cooking spray and grill the marinated vegetables until desired tenderness.
- Serve as is or drizzle with more olive oil or vinaigrette and enjoy!
