Ingredients

  • 1 zucchini, sliced into coins
  • 1 squash sliced into coins
  • 1 bell pepper, cut into strips
  • 1 small eggplant, sliced lengthwise
  • 1⁄2 bunch asparagus, washed and trimmed
  • 2 TBS olive oil or vinaigrette of choice
  • Non-stick cooking spray
  • Salt to taste

Directions

  1. Toss the veggies in the olive oil or vinaigrette and salt.
  2. Coat your grill with nonstick cooking spray and grill the marinated vegetables until desired tenderness.
  3. Serve as is or drizzle with more olive oil or vinaigrette and enjoy!
